Summer’s here, and I bet you’ve started to feel the heat too. Finally, it’s that time of the year when we can experiment with cool foods. Along with the summer vibe, it’s also Tropics International Day. And this means we have all the more reason to use the summer fruit platter to make something cool. Today I’ll be sharing with you the best mango ice cream recipe – and yes, it’s vegan! Now, I’m sure you must be wondering – How do I do a vegan coconut mango ice cream? Well, you don’t need to worry – follow my simple steps, and you’ll be able to whip up coconut mango ice cream dairy-free in no time!

Before we begin with the recipe, I’d like to take a moment to talk about refined sugar and how it affects our bodies. Refined sugar has been part and parcel of our daily lives. We end up consuming so much of it in the form of cookies, sweetened drinks, jams, jellies, and even ice creams. We eat a copious amount of it without realizing how harmful it is for our bodies. That’s also why I make sure that I steer clear from even mentioning sugar in my recipes. And it’s no surprise that today’s mango coconut ice cream vegan too has no sugar in it.

Refined sugar is linked to many lifestyle ailments such as obesity and diabetes. This sugar has also shown its effects on slowing down the functioning of the heart, leading to heart ailments. In addition, excessive consumption of refined sugar is connected to a higher likelihood of depression, liver diseases, dementia, and even cancer.

This kind of sugar is added to food only to enhance its taste. The foods in which refined sugars are generously used seem super appealing but are actually harmful. These processed foods are full of empty calories and provide no nutrition to the body.

What are the Different Names for Refined Sugar?

The various items we pick from the grocery store may not have ‘refined sugar’ written across them in bold letters. However, that does not mean that these don’t contain processed sugar. The industry uses different names to label added sugar – caramel, rice syrup, molasses, corn syrup, cane sugar, glucose, maltose, and dextrose.

All we need to do is check the ingredients of whatever we pick off the supermarket shelves. This is the only way to protect our bodies from these hidden, added sugars.

What are the Alternatives to Refined Sugar?

Natural alternatives to refined sugar are maple syrup or dates. While these are perfect substitutes to processed sugar, these foods too are low in fiber and high in sugar content. That’s why we need to include these substitutes, too, in moderation.

When we know how a particular food product affects our body, we should try and avoid it as much as possible. So instead of the loaded with sugar processed foods, let’s opt for healthier options such as this healthy mango ice cream recipe.

Equipment

  • high-speed blender

Ingredients

For the White Chocolate outer layer

  • 2.5 oz cacao butter liquid
  • 1/3 cup raw cashews soaked for at least 2 hours
  • 1/3 cup coconut oil liquid
  • 1 tsp maple syrup

For the Coconut cream

  • 1 cup raw cashews soaked for at least 2 hours
  • 1 cup coconut cream I sed the one from Whole Foods
  • 1/3 cup cashew milk or any other milk you prefer
  • 2 tsp lemon juice
  • 1 tsp maple syrup

For the Mango filling

  • 1 mango ripe
  • 1 tsp turmeric powder
  • 1 tsp ginger powder
  • 1/2 Mediool date

Instructions

For the White Chocolate outer layer

  • Place all the ingredients in a high-speed blender and blend until you have a liquid consistency.
  • Pour to a glass bowl and set aside at room temperature until needed.

For the Mango filling

  • Place all the ingredients in a high-speed blender and blend until you have a jam consistency.
  • Empty to a glass jar, secure with the lid, and set aside in the fridge until needed.

For the Coconut cream

  • Put all the ingredients in the blender and blend until you get a cream.

For the Assembly

  • Fill the base of the molds with a spoonful of coconut cream.
  • Tap gently to remove excess bubbles and to spread the cream throughout the mold.
  • Add a teaspoon of mango jam and insert the wooden stick.
  • Top with another teaspoon of mango jam and finally with another coconut cream.
  • Put in the freezer until they harden.
  • Once hard, get the white chocolate outer layer and bathe the ice creams in it. Then, quickly add the decoration – as it sets fast, and leave it on non-stick paper until they've hardened again.
  • Freeze once more and enjoy whenever you like!
